A tower of quinoa, cucumber, red bell pepper, rotisserie chicken, corn, arugula, scallion, mint, basil, lime, and crispy shoestring potatoes over roma tomatoes in a curry vinaigrette.
Porter Creek features a fresh contemporary American menu with California-Mediterranean influences. Signature to the brand are fire roasted meats and rustic vegetables from the rotisserie and woodfired oven where temperatures approach 600 degrees.

Ground Turkey Taco Salad

Brown Lean Ground Turkey and season with Taco seasoning only ( I use Trader Joe’s *spicy*) . Use spinach, romaine, mixed greens etc. Top with 1/3 cup fat free or reduced fat cheddar cheese and salsa. I also used onions and peppers to add additional flavor.

After the very long Thanksgiving weekend; it’s time to get back on track and put some clean food into my system. The best way is always to prepare meals at home but if you are busy and on the go; Macys downtown Minneapolis has the freshest vegetable selection for a low calorie meal.
