Use food processor to shred up cauliflower to look like grains of rice. Sauté shallots and garlic in chili EVOO. ADD cauliflower rice and cook until soft. Season with cayenne pepper and crushed red pepper flakes. Approximately 10-15 minutes. In another pan; sauté peppers and onions and add grilled chicken. I steamed broccoli and added to stir fry. Add sweet curry powder to mixture and serve on top of the cauliflower rice.
