Cycle 2 allows me to bring some additional items in my meal structure. Legumes, some natural starches, lean cuts of meat that were not allowed in Cycle 1, shellfish and some starchy vegetables.

They call themselves an Urban Diner which is fitting because they are located in Uptown on 21st and Hennepin Ave. A very cozy atmosphere with a menu to match. What I adore about this spot is the menu. It is “shi shi poo poo” which means extra fancy words are used on the menu to describe basic food. Right up my alley! Usually shi shi poo poo entrees are full of flavor but are lacking portion size. Nope not at The Lowry.
Go there for Breakfast, Lunch, Dinner or Happy Hour. Here’s a little hint: They have tidy bathrooms.

Yay for legumes

I seasoned ground turkey with everything I could think of; onion, garlic, basil, cayenne paper, paprika, Italian seasoning, black pepper, garlic powder, 21 seasoning, sautéed peppers. Made into meatballs and baked in 350 degree oven for 15-20 minutes. I used 1/2 cup canned low-sodium black beans, aprox 1/3 cup of tomatoes and 2 TBSP of garlic salsa. Sprinkle cilantro or parsley on top and more cayenne pepper. Done!

Chicken and veggie stir fry with cauliflower rice

Use food processor to shred up cauliflower to look like grains of rice. Sauté shallots and garlic in chili EVOO. ADD cauliflower rice and cook until soft. Season with cayenne pepper and crushed red pepper flakes. Approximately 10-15 minutes. In another pan; sauté peppers and onions and add grilled chicken. I steamed broccoli and added to stir fry. Add sweet curry powder to mixture and serve on top of the cauliflower rice.

Eggplant Parmesan

Peel eggplant and slice 1/4 inch. Beat 3-4 egg whites and a few tablespoons of water. Season mixture. I used garlic, Italian seasoning, cayenne pepper, extra basil. Dip eggplant slices into mixture and then coat both sides with Parmesan cheese. Spray pan with EVOO spray. Place eggplant on pan and sprinkle with additional seasoning and garlic powder. Spray EVOO again over the slices. Bake in 400 degree oven for 20 minutes. Flip and cook additional 10 minutes. Top with 1 cup marinara sauce. Place back in oven until sauce is hot.
